If you want terroir, i.e. what fundamentally shapes the wine and its taste, you have to refrain from intervention. Above all, it is a matter of trust: trust in your own potential and in the fact that nature can develop on its own if you just let it. Bernhard Ott is convinced of this. With the switch to biodynamics in 2006, the Wagram winemaker has fully adapted to the rhythm of nature: uncompromising and open to whatever the respective vintage has in store for him.
