BACK TO THE FUTURE
Uncompromising and respectful.

We learned early on to focus on what is right in front of us. For us, that means Wagram and Kamptal – two regions shaped by deep loess soil. It also means Grüner Veltliner, a grape variety that thrives particularly well in this terroir. Since taking over the winery from his parents in 1993, Bernhard has delved even more deeply into his family history and has gradually returned to the traditional methods of winemaking. The result is that today, year after year, the wines express their unique terroir.

We have always valued flexibility and an openness to new ideas. Working with nature means adjusting to her whims – otherwise you may soon find she has different plans for you. Instead, we allow ourselves to be guided by change, which we see as an opportunity for further development. Our family and our team possess deep knowledge of our soils and vineyards. We know our vines and the taste of healthy, physiologically ripe grapes. That knowledge helps us make the right decisions at every stage of our winemaking.

BIODYNAMICS

Since 2006, we have been proud founding members of respekt-BIODYN, a community of winegrowers dedicated to creating a healthy balance in soils, plants, animals and people, and to producing wines of the highest quality and individuality through biodynamic methods. It was a bold step into our future, and a valuable investment in nature and the generations to come.

IN THE VINEYARD:
Trust in nature.

Much of the work in our vineyards is carried out entirely by hand: harvesting the grapes, stirring the biodynamic preparations, and producing our own organic compost. We rely on gentle soil cultivation with light machinery, gentle pruning according to the Simonit Sirch method to maintain balance between growth and yield, and we foster diversity through cover crops, hedgerows, apricot trees, nesting boxes, and our own bee colonies. Artificial irrigation has no place in our vineyards. Over the years, the vines root ever deeper into the Hengstberg.

IN THE WINE CELLAR:
Advocates of tradition.

Fermentation occurs spontaneously through natural yeast populations that are brought with the grapes from the vineyard to the cellar. We use grape mills and basket presses, macerate the grapes with stems, and store our wines on the full lees in large Stockinger oak casks. Generations before us upheld traditional methods of winemaking, and we are following in their footsteps: an homage to tradition, that we carry into the future with respect for the past and with the knowledge of today. True to our goal of creating wines that fully express their unique terroir and character.

OAK CASKS

They are the link to our tradition: large oak casks, just like the ones that have always been used at our winery. Handcrafted by the Stockinger family cooperage in Waidhofen an der Ybbs from up to 13-year-old, air-dried oak and with a capacity between 5,000 and 10,000 liters. Ried Kirchthal, Ried Spiegel, Ried Stein and Ried Rosenberg all spend at least two winters in these casks before being bottled.

BASKET PRESSES

The generations before us already pressed their Grüner Veltliner with basket presses. We have taken this method from the past and refined it with modern-day technology. Pressed slowly and gently, the stems create a natural drainage system that allows us to transfer 100% of the full and unadulterated taste of our vineyards into the barrel. Our 1ÖTW Erste Lagen and DER OTT® are processed exclusively using basket presses.

Our winery is a place of possibilities. No matter what we are in the mood for. It is our diversity that sets us apart. Our visitors have a choice: between our shop and our tasting area, between a seated tasting, a training session, or one of our events. Visitors can enjoy a quick glass of wine or a comprehensive tour that provides an inside look at our craft.
